Making Tortillas

I've decided to become an expert tortilla-maker. I am, after-all, a half Mexican Mama. My kids are going to be all like "my mom made the best tortillas, we never bought them from the store." and snooty like that.



Making tortillas from scratch makes you feel really domestic and rustic. Not to mention, they're delicious. The downside is that I've been snacking on a lot of tortillas lately and I'm not sure that's the best idea for my postpartum state...however I'm starving so whatever.

Here are a few resources I found to make me the best tortilla-maker ever.




So far, I've discovered that to make authentic, delicious tortillas you have to use lard. You can find it in the grocery store next to the shortening. You could use shortening if lard freaks you out, but the flavor is amazing when you use the real stuff. I tried to make them in the past using olive oil or butter and it just doesn't work the same. Make sure to roll your tortillas as thin as you can get them, and get the heat just right on your pan or griddle. Too hot and you will get burned, black spots. Too cool and your tortillas won't bubble and they will be too tough.
